A recipe for delightful vegan almond flakes cookies that will make your day

We are one French and a half at home so it would be fair to say we will probably never be vegan. However, that does not mean we don’t like to try new recipes, such as some tasty almond cookies we take with us for our walks. Check the vegan cookies recipe below and let us know how you enjoyed them!

Ingredients you’ll need

For 16 awesome cookies:

  • chickpeas flour: 1 cup
  • grounded flaxseed: 1 tablespoon
  • warm water: 2 tablespoons
  • golden syrup: 4 tablespoons
  • sunflower oil: 1/3 of a cup
  • flaked almonds: 1/2 of a cup
  • baking soda: 1 teaspoon
  • salt: a pinch

How to prepare those delicious vegan cookies

  1. In a bowl, mix the flaxseed and the water. Then add the sunflower oil and the golden syrup and mix everything together.

2. In a second bowl, mix the chickpeas flour, baking soda and salt.

3. Add the dry mix (step 2.)to the liquid (step 1.) and mix everything together.

4. Finally add the flaked almonds and mix gently to avoid breaking then in too small pieces. Don’t hesitate to use your hands!

5. Leave to rest for 1 hour at room temperature.

6. Preheat your oven at 180°C (traditional) or 170°C (fan)

7. Prepare a piece of baking paper on an oven tray and form your little cookies (making little balls in your hand and flatten them on the paper *splat! splat!*)

8- Bake in the oven for 15 to 20 minutes

9- They are ready!

Those tasty cookies are not taking space in a backpack and they will not fall into crumbs. They make a great treat for your day out, together with a hot drink!
